Chettinad Cuisine is an exotic cuisine that offers a variety of vegetarian and non-vegetarian dishes, and has become famous all over India, especially in the south.
The Chettinad Cuisine is characterized by a wide selection of meat and fish cooked in tamarind and roasted spices. These spices and rice varieties were chosen and introduced by Chettiari (inhabitants of the area in question), to meet their needs during their business trips throughout Southeast Asia. Contamination with other countries of Southeast Asia, especially Burma, Malaysia, Vietnam, Singapore, have facilitated the introduction of new ingredients, different cooking methods and different combinations often far from the typical Indian tradition.
"Mughlai cuisine consists of dishes developed in Medieval India at the centers of the Mughal Empire. It represents a combination of the cooking style and recipes of Central Asia and North India. The Mughlai cooking styles is used in the traditional cuisine of North India."
